Baked Oatmeal

This delicious baked oatmeal is a good source of fiber and protein. Served hot with a splash of skim milk, it’s a great way to start your day.

Ingredients

  • 3 c. dry quick oats
  • 1 c. skim milk
  • 1/2 c. raisins
  • 1/2 c. applesauce
  • 1/4 c. packed brown sugar
  • 1/4 c. chopped walnuts
  • 2 tsp cinnamon
  • 2 tsp vanilla extract
  • 2 tsp baking powder
  • 4 egg whites

Directions

  • Preheat oven to 350 degrees F.
  • Mix oats, brown sugar, cinnamon and baking powder.
  • Beat in milk, eggs, applesauce and vanilla extract.
  • Stir in raisins and walnuts.
  • Spread in a greased 9x9 inch baking dish.
  • Bake for 40 minutes.
  • Cut into 9 pieces.
