Baked Oatmeal
This delicious baked oatmeal is a good source of fiber and protein. Served hot with a splash of skim milk, it’s a great way to start your day.
Ingredients
- 3 c. dry quick oats
- 1 c. skim milk
- 1/2 c. raisins
- 1/2 c. applesauce
- 1/4 c. packed brown sugar
- 1/4 c. chopped walnuts
- 2 tsp cinnamon
- 2 tsp vanilla extract
- 2 tsp baking powder
- 4 egg whites
Directions
- Preheat oven to 350 degrees F.
- Mix oats, brown sugar, cinnamon and baking powder.
- Beat in milk, eggs, applesauce and vanilla extract.
- Stir in raisins and walnuts.
- Spread in a greased 9x9 inch baking dish.
- Bake for 40 minutes.
- Cut into 9 pieces.
